Peach Yogurt and Strawberry Popsicles

Peaches and summer go hand in hand. Mom used to make a die-for-delicious peach homemade ice-cream that was a staple of summer. Since I'm not an ice-cream maker, I thought I'd add peach to a popsicle creation.


I love Greek yogurt so I started with peach yogurt, although you could add fresh peaches to vanilla yogurt if you wanted (yum!). 


I added strawberries because peaches and strawberries are a heavenly pair.


I allowed the popsicles to sit overnight till good and frozen. If you're wondering, yes, I had one for breakfast; hey, it's YO-GURT. Plus, I knew once the kids saw them, they'd be gone, so I grabbed while the getting was good.

Knockoff Starbucks Pumpkin Bread

I'm crazy about Starbucks' pumpkin bread. It's so dense and delicious! I searched for a recipe and tinkered with this one to come up with something so close I call it, Knockoff Starbucks Pumpkin-Bread.

1. Preheat oven to 325 degrees F. Grease and flour bundt pan.

2. In large mixing bowl, combine sugar, eggs and oil; beat until smooth. Add water and beat until blended. Stir in pumpkin, ginger, cinnamon, allspice, and cloves.

3. In medium bowl combine flour, baking soda, salt and baking powder. Add dry ingredients to pumpkin mixture and blend just until it's all mixed. Pour batter in prepared pan.

4. Bake in preheated oven until knife comes out clean, about 1 - 1 1/2 hours.

Ingredients:

½ cup sugar
½ cup brown sugar
4 eggs
1 cup vegetable oil
2/3 cup water
1 15 ounce can pumpkin puree
2 teaspoons ginger
1 teaspoon cinnamon
1 teaspoon allspice
1 teaspoon ground cloves
½ cups all-purpose flour
2 teaspoons baking soda
½ teaspoon salt
½ teaspoon baking powder
